Summary

As Weissman once said…

"。。。can we please stop with the barrage of 2。3 second meals that only need 1 ingredient? I get it… we’re busy。 But let’s refocus on the fact that beautifully crafted burgers don't grow on trees。"

Ironically this sounds a lot like he's trying to convince you to cook, but he's really not。 Is this selling the cookbook? The point is that the food in this book is an invitation that speaks for itself。 Great cooking does, and should, take time。 Now is the time to double down and get your head in the cooking game。 Or you know, don't。 Maybe get someone else to cook this stuff for you。。。that works too。

How can you know if something is your favorite if 50 to 80 percent of the stuff you've been eating was made by someone else? Butter, condiments, cheese, pickles, patties, and buns。 For a superior and potentially even life-changing experience, you can (and should, to be honest) make these from scratch。 Create the building blocks necessary to make the greatest meal of your life。

While you're at it, give it the Joshua Weissman—or your own—twist。 As Joshua would say, “If you don’t like blue cheese, then don’t use blue cheese。” From simple staples to to gourmet to deep-fried, you are the master of your own kitchen, and you'll make it all, on your terms。

With no regrets, excuses, or apologies, Joshua Weissman will instruct you how with his irreverent humor, a little bit of light razzing, and over 100 perfectly delectable recipes。

If you love to host and entertain; if you like a good project; if you crave control of your food; if fast food or the frozen aisle or the super-fast-super-easy cookbook keeps letting your tastebuds down; then Joshua Weissman: An Unapologetic Cookbook is your ideal kitchen companion。

Here we go! I was fortunate enough to have gotten my hands on an advanced readers edition of this wonderful book。 *DISCLAIMER* I have not read through every single recipe in this book, nor have I attempted to make every single recipe in this book。 My review is subjective, and I am entitled to it。 I am also not a fan of his(I have never watched his YouTube videos before though I am familiar with the fact that he is well known on YouTube), nor am I a professional chef or critic。I really liked this Here we go! It's sorted into different sections(breakfast, meat, soup, etc。) and is very neat in terms of font choices and pictures(though in advanced copies, the pictures are in black and white)。 He begins with a section about the basics of cooking making it easy for beginning cooks to get their hands on the recipes they need to be able to cook his recipes to a relative degree。 He keeps a very light and funny tone throughout the entire cookbook and cracks many jokes throughout the notes that he adds to the recipe instructions which keeps the book interesting。 He also pays homage to his mother in some of his recipes, and includes some of her iconic ones, which was very fun to see。 Overall, I am very pleased with this advanced copy, and I will continue to work my way through the book and make recipes as I see fit。 My only issue is that most of these recipes don't fit my personal tastes which is a shame。 3 stars! 。。。more

EDIT: Oh my。 Did not read that it comes out Sept。 14, 2021 and I might be the only one writing a currently reading thoughts/review thing for myself at the moment。 Hope it is, uh, OK to keep this up。 Someone let me know if I should take it down until it is closer to pub date。Fell upon a uncorrected book proof copy/ARC?--Is that the right terminology?--and holding on to it because I was allowed to。 Also, I like his dinner roll recipe even though I have made that same type of roll from other good o EDIT: Oh my。 Did not read that it comes out Sept。 14, 2021 and I might be the only one writing a currently reading thoughts/review thing for myself at the moment。 Hope it is, uh, OK to keep this up。 Someone let me know if I should take it down until it is closer to pub date。Fell upon a uncorrected book proof copy/ARC?--Is that the right terminology?--and holding on to it because I was allowed to。 Also, I like his dinner roll recipe even though I have made that same type of roll from other good online recipes。 Made the recipe day after I brought it home; still holds up。I have not read much of the copy though I do read through recipe steps I know I am unlikely to attempt。 Main takeaways; lol takeaways:-Appears that the copy mostly shares the same conversational voice that Josh--Oh goodness, I cannot remember if he prefers Josh or Joshua from people he does not know; sorry!--uses in his videos, good for him even if not as chaotic-Both volumetric and metric measurements seem to be present in the recipes I have thumbed through plus the estimated cook time and prep time-Some recipes do that thing where a recipe ingredient list includes an ingredient and references the page number within the book to make that one possibly labor-intensive ingredient that you will need to make the original recipe you were looking at。 So it could be a two page sandwich recipe with four ingredients that you can make from four recipes within other parts of the book-At least one recipe from his mama, and got to respect mom recipes especially when it sounds delicious。 That's just the rules。-I have not yet read him calling himself Papa--he has done that before, right?--or making innuendos about his butt, but I admit I could be a better comprehensive reader。 Also, I did not read all of the recipes in full。 I am awful and probably will not try all the recipes since my bare basics pantry and angry wallet would growl at me。 Still will page through it in the coming weeks and months if I am feeling adventurous。I hope I can try more of his recipes。 I have intermittently been following his video output since like his focaccia or sourdough videos days。 Still like his videos, but sometimes his editing, cultivated exaggerated screen personality (seems like a confident but chill skilled guy otherwise), and his ability to always say his version is better in his "But Better" series is sus。 Sometimes the R&D and chemicals of mass produced food conglomerates just sounds, looks, and is tastier for reasons unexplainable (e。g。 Krispy Kreme video)。 Glad his "But Cheaper" puts the world in balance since the Better series often gets wild complicated。Huge respect to Joshua Weissman for this achievement in his career。 His skill and delicious recipes (that I have tried and sampled) are undeniable。 Hope it pleases his audience and reaches others as well。Also, I am enough of an irregular viewer to not know he had a cookbook coming out until this past week, but I also watched his most recent IKEA meatballs recipe and had to feel for the guy for the amount of flak coming his way from people who know Swedish style meatballs。 His recipe looked better than IKEAs, but it also seemed vastly different from the method that I strangely know is what makes Swedish meatballs Swedish。 Thank you, that one weird time I tried authentic Swedish meatballs with mash and ligonberries; so worth it。 。。。more
